- 4 very good tomatoes – not the watery crap you find in most supermarkets.
- 1 small courgette
- half a stick of celery
- vinaigrette of your choice
Cut your toms into segments and thinly slice your celery stick and throw into a big bowl.
Cut the courgette into 1/4″ ribbons lengthways, then chop each strips into 1/4″ matchsticks – add to the bowl.
Mix in your favourite salad dressing – I recommend extra virgin olive oil, white wine vinegar, good balsamic, salt and pepper.
